Immerse yourself in the beauty and pasta culture of Piemonte—a region in Italy with many similarities to our Foothills—where delicate pastas filled with regional ingredients are cherished by both the cosmopolitan city culture and rural traditions alike. The region’s pasta heritage brings together filled pastas, rich egg yolks, and mountain cheeses, complemented by treasures such as Barolo wine, truffles, and hearty fillings.

Stuffed and egg-rich pastas are the signature of Piemonte, with each province offering its own distinctive shapes and fillings, deeply rooted in local tradition and craftsmanship.

Join Claudia for this special series exploring the region’s most iconic stuffed pastas. Each class will last approximately 2½ to 3 hours. You’ll enjoy a tasting during the session and leave with the pastas you’ve crafted by hand.

Ravioli delle Erbe Selvatiche – Traditional rustic ravioli filled with wild seasonal greens and herbs gathered from the hills and mountain areas of Piemonte. Common fillings include nettles, spinach, borage, dandelion greens, and local mountain herbs blended with ricotta or fresh cheeses. Delicate yet deeply flavorful, these ravioli reflect the region’s strong connection to the land and are often served simply with butter, sage, or light cheese sauces to highlight the freshness of the filling.

Tagliolini – Delicate ribbon pasta from Piemonte, tagliolini are thin strands made with a rich egg dough that gives them a silky texture and deep golden color. Slightly wider than tajarin yet equally elegant, they are traditionally paired with butter, light meat sauces, mushrooms, cream, or the region’s prized truffles. Their refined texture and richness make them one of the most versatile and beloved long pastas of Northern Italian cuisine.
