Pueblo White Wheat
An ancient Southwestern landrace brought to Colorado by Spanish settlers in the 1600s, Pueblo White is deeply adapted to the arid high desert climate. It produces a flour with soft sweetness, gentle nuttiness, and exceptional smoothness, creating pastas that are delicate, aromatic, and comforting.
Project Pasta is a collaborative series of craft pastas made from organic Colorado-grown specialty grains. Each pasta highlights the unique flavor, nutrition, and story of a specific grain variety and the farmers who grow it. By transforming these exceptional grains into delicious foods, Project Pasta connects people to the land, the growers, and the powerful impact of organic agriculture — one bowl at a time.
Hobbs & Meyer Farm is a family-owned, certified organic farm in McElmo Canyon near Cortez, Colorado, growing heritage and climate-resilient grains, garlic, legumes, vegetables, and open-pollinated seeds. Led by farmers Dan Hobbs and Nanna Meyer, the farm focuses on regenerative practices, seed stewardship, and biodiversity, producing flavorful grains that support resilient agriculture and vibrant regional food systems.
